Easy Spiced Baked Apples (Without Cinnamon)

Simple, sweet baked apples full of fall spices and a crunch of pecans— and vegan-friendly, to boot.

Ingredients

  • 3 small apples
  • 1 ½ teaspoons coconut oil alt. cocoa butter
  • 1 teaspoon coconut sugar alt. maple syrup
  • ¼ teaspoon ginger powder
  • teaspoon vanilla powder
  • teaspoon cardamom
  • pinch of salt
  • dash of ground coriander seed
  • ¼ cup chopped pecans optional topping
  • 2 Tablespoons coconut chips optional topping

Instructions

  • Preheat your oven to 375°F (190°C), then wash & chop your apples into small pieces, about ½' thick, and put them into a mixing bowl.
  • Combine your oil, sugar, ginger, vanilla, cardamom, salt, and coriander in one bowl until they form a thin paste. Then scrape the spice mixture onto your apples pieces and stir everything until well-combined.
  • Pour your spiced apples into a baking dish lined with foil. Any size or material of baking dish is fine as long as the apples can be spread into a single layer. Then sprinkle on your pecans & coconut chips (if using) before sliding the tray into the oven to bake for 25 minutes.
  • Once done, the apples will be tender and lightly-browned; serve with coconut cream, a tolerated ice cream, or just enjoy them with a spoon!

Notes

Apple Types: I used Fuji apples, but McIntosh or Granny Smith would also work great.
Swapping Spices: you could swap out my choice of spices for your own, or remove those you know you don't tolerate, but make sure to rebalance out the blend of flavors.
