- ½ Cup fresh or frozen mango chunks chopped (~1 mango)
- 2 Tablespoons passion fruit syrup see notes for subs; alt. 1 Tablespoon fresh passion fruit pulp + 2 Tablespoons simple syrup
- soda water or sparkling water to top
- cup of ice
Peel your mango and remove the softer orange-yellow flesh around the pit, chopping it as finely as you can. Alternately, add the fresh or frozen fruit to a blender and chop until pureed.
In a large mug muddle the chopped mango and passion fruit syrup.
Then add the ice and sparkling water, stir everything lightly, garnish with fresh mint & enjoy!
Using Frozen Mango Chunks: to use frozen fruit rather than fresh, I highly recommend using a blender to mix them with the passion fruit syrup rather than hand-chopping, as the temperature difference will be extra noticeable.
Brand of Sparkling Water: the Sanza sparkling drinks are made with fruit purees, and come in various flavors, but I know they're not available everywhere. I like the Poppi brand of prebiotic drinks, but in a pinch, any brand of sparkling water would be a decent sub.
Adjusting the Sweetness: adding more simple syrup or liquid sweetner of your choosing will increase the sweetness of the drink, though be careful not to add too much of the passion fruit syrup or it won't be balanced out by the mango's sweetness.
