Ingredients

  • 2 Tablespoons chia seeds about 20g
  • 2 cups apple juice about 480ml
  • Fresh ginger sliced (for garnish); optional

Instructions

  • In a medium bowl, combine the chia seeds with ½ cup of apple juice. Stir well to ensure the seeds are evenly distributed.
  • Let the mixture sit for about 10 minutes, stirring occasionally. This allows the chia seeds to absorb the juice and swell, creating a. gel-like consistency
  • Once the chia seeds have expanded, pour in the remaining apple juice and mix until well combined.
  • If you’re using ginger, slice it thinly and add it to the juice for a refreshing kick. You can also muddle the ginger slightly to release more flavor.
  • Pour the chia apple juice into glasses and give it a gentle stir before serving. You can also chill it in the refrigerator for a bit if you prefer it cold.
  • Garnish with additional slices of ginger on the side of the glass, if desired.

Notes

Sweetness: Feel free to adjust the sweetness by using unsweetened apple juice or adding a bit of honey or maple syrup if you like it even sweeter.
Nutrient-Dense Options: This drink is packed with fiber and omega-3 fatty acids, making it a nutritious choice for breakfast or a refreshing snack.
Storage: If you’re not eating low histamine, chia apple juice can be stored in the fridge for up to 3 days, but it’s best enjoyed fresh. Just give it a good stir before serving, as the chia seeds may settle at the bottom. The rest can also be used to make some great popsicles!
Adding Flavor: Try adding in a dash of homemade flavored simple syrups for some more unusual flavor blends, like my basil syrup, cardamom syrup, or rose syrup.
