Crystallized Honey: normally you need to heat and carefully cool honey crystals to get them back to liquid form, but even then it doesn't work 100% - once you've learned how to whip honey as hands-off as this, I swear you'll never go back to the old way.
Low Histamine Sweetener: though all sweeteners should be enjoyed in moderation when you're managing histamine issues, honey is a particularly good low histamine sweetener because of its antimicrobial and antiinflammatory properties.
Multi-Purpose: this is one of my best-kept secrets for sensitive skincare and self care for tough days - not only is this great to eat, but I've been using honey as my ONLY face wash for over a decade (it's both antifungal and antibacterial without being tough on the skin).

🥣 How to Cream Honey (Step-by-Step)
Step 1) Pour your honey into the bowl of a stand mixer fitted with the whisk attachment - alternatively, you can use a hand mixer (image 1).
Step 2) Start the mixer on low speed to prevent splattering, then gradually increase to medium-high speed over the course of 2 minutes (images 2 & 3).
Step 3) Whip the honey for 15-20 minutes (hence the stand mixer), or until it becomes thick, creamy, and lighter in color (images 4-7).
Step 4) Occasionally stop the mixer to scrape down the sides of the bowl with a spatula to ensure all the honey is evenly whipped. Once the honey reaches a smooth, spreadable consistency, transfer it to a clean jar or airtight container.

Honey cream is one of the few - maybe only - foods which can be stored indefinitely. But to keep creamed honey as airy and light as when you first made it, keep it in a cool, dark place away from direct sunlight, such as a pantry or cupboard.
Maintaining a consistent temperature, ideally around 60°F (15°C), is important to preserve its creamy texture. Use an airtight container to prevent moisture and contaminants from entering; I recommend a glass jar like the one I use here.
