Not only is it high in fiber and antioxidants, but it's also a rich source of nutrients like choline, folate, and sulforaphane, all of which play a role in the body's methylation pathways (essential for proper detox).
Antihistamine Herbs & Spices: With garlic, rosemary, and Italian herbs, this cauliflower baked chicken is full of naturally antihistamine ingredients. These herbs and aromatics contain plant compounds that may help support the body’s ability to regulate histamine levels while adding plenty of flavor.
🍠 Ingredients


Chicken Breasts: the white meat of the chicken, and often the most kid-friendly, these are the base of the cauliflower baked chicken and one of my favorites to use in low histamine chicken recipes.
Cauliflower: this cruciferous vegetable combines with the healing powers of spices & herbs to form a delicious spiced meal for your next dinner. The basic flavor of cauliflower isn't very strong, so it takes to the spices beautifully.
Coconut Oil: a naturally dairy-free cooking fat made from coconut meat, coconut oil adds richness and helps ingredients cook evenly; use unrefined for a light coconut flavor or refined for a more neutral taste.
Raw Garlic: when minced this low histamine spice adds a bite of umami and sharpness to the chicken seasoning, as well as strongly antibacterial properties.
Italian Seasoning, Rosemary & Fresh Basil: these are my herbs of choice to complement this particular dish, but that's mainly because they're what I already have in my pantry. If you have other favorites or other herbs on hand, you can choose any fresh herbs which tickle your taste buds.
Sumac: this red-hued spice is actually a ground-up dried berry with strongly antihistamine and acidic properties. It adds tang and a bit of sourness to the chicken's simple spice blend.

🍗 How to Make Cauliflower Baked Chicken (Step-by-Step)
Step 1) Preheat oven to 400°F (205°C). Then wash and dry your cauliflower, and cut it into small florets (no larger than 1 inch on any side), placing them into a large mixing bowl (image 1).


Step 2) Mince the garlic and add it to the cauliflower, and then measure and add just 1 ½ Tablespoons of oil and 1 teaspoon of salt to the cauliflower & garlic in your bowl. Toss everything together until each floret has been coated with a thin layer of oil, salt, and garlic bits, then arrange them in a single layer on the silicone mat (placed on top of your baking sheet) (image 2). Bake the mixture for 15 minutes.


Step 3) Meanwhile, cut your chicken breasts into 8 to 12 strips. Once your timer goes off, take the tray of cauliflower out of the oven (images 3 & 4), then place your chicken strips on the tray with your cauliflower florets.


Step 4) Drizzle your last 1 ½ Tablespoons of oil over the chicken, then sprinkle the sumac (if using), Italian seasoning, and rosemary onto both the chicken and cauliflower bake, making sure each piece of chicken is evenly-coated (images 5-7).



Step 5) Mix all the raw chicken pieces with the half-baked cauliflower so that they're both fully seasoned, then bake everything for 20 more minutes, until the centers of the chicken breast pieces reach 165°F/75°C (images 8 & 9). Once your timer goes off, simply plate and serve your baked chicken and cauliflower with a sprinkle of chopped basil (optional), preferably with a side of root vegetables, like roasted sweet potatoes or blistered carrots.

- Herb-Forward Chicken: Swap Italian seasoning for 1 teaspoon each of dried oregano and thyme for a slightly different herb profile.
- Lemon-Infused: Use 1 tablespoon fresh lemon juice instead of sumac for a bright, tangy flavor.
- Garlic-Light Version: Reduce garlic to 2–3 cloves for a milder taste if desired.
- Crispy Cauliflower: Toss cauliflower florets in a light coating of coconut flour or almond flour before baking for extra crunch.
- Mixed Vegetables: Add other low histamine vegetables like zucchini, green beans, or bell pepper to the baking dish for variety.
- Fresh Herb Finish: Garnish with chopped parsley or cilantro instead of basil for a different fresh note.

If you want to freeze your leftovers, consider putting them in single-serve glass containers that are easy to reheat in the toaster oven or the microwave, to save on dishwasher space and reduce plastic usage. Reheat at 300°F (150°C) for about 10 minutes.

Oil: you can really use any high-smoke point oil for this, and the meat lovers among you can even use an animal fat if you'd like (such as lard).
Chicken: you can use any cut of chicken you'd like, but you may have to adjust the baking time. I just chose chicken breasts because they're easy to find for most people, and about a quarter to one-third a pound of chicken seems to be the right serving size for most people's preferences, making this super easy to freeze in single servings after baking.
