These Air Fryer Potato Blossoms are a favorite in our household, as you can make them, with regular potatoes or baby potatoes, and they're so easy that even the kids can help with prep. All you need is a bit of oil and salt, then a sprinkle of your favorite blooming potato toppings!

Use Up Potatoes: This recipe will quickly use up any extra potatoes (of any type), the potato blossoms freeze great, and I promise you’ll want to make them week after week. We always keep potatoes around in a 3-pound bags, and eventually they need to be used-up, so this has become a staple for us!
Season as Desired: These blooming potatoes are simply flavored so that they can be paired with any dish, but you can also add a smattering of fresh herbs, minced garlic, fresh cheese & scallions, or even a touch of flavored salt to totally change the final dish.
Super Simple: If you need an easy & quick low histamine side dish for dinner, this should stay at the top of your list. You can make it year-round, and it goes from fridge to table with less than 10 minutes of work!
They're a particularly great addition to a low histamine breakfast or brunch, and so easy that kids can help out with any step.
Ingredients
Potatoes: you can theoretically use any type of potato for this recipe, but I highly recommend a creamier type, like baby potatoes or the gold potatoes I used here.
Garlic: using garlic powder or raw garlic adds an umami element to the potatoes that really rounds out the overall flavor and complements meats and root vegetables as a side dish.
Oil: I used ghee for this recipe, but you can use any high-heat oil you tolerate. Coconut oil is another good option, but check out my post on low histamine oils for more ideas.
How to make potato blossoms in air fryer: step-by-step instructions
Step 1. Peel your potato potatoes, then rinse them off, dry them, and place them directly on a plate in the microwave for two and a half minutes on high.
Step 2. Take them out of the microwave and let cool for a minute before scoring. You'll want to put each blooming potato between a couple of flat kitchen utensils before making short slices in one way and then the other, making the potato look like a massive grid but without cutting all the way to the bottom (otherwise the potato will fall apart in the air fryer).
Pro-Tip: keep your knife wet in-between every few slices, as the starch from the mostly-cooked potato is likely to make the knife stick and start pulling the delicate potato bits apart. Leave ⅓-1/2" at the bottom of the potato blossom.
Step 3. Then preheat your air fryer to 355°F (180°C) for about 3 minutes while you slowly brush the oil all over the potato, preferably lard or avocado oil so it's high-heat safe. Make sure there's oil in every little crevice, and then sprinkle on the salt, garlic powder, and dried rosemary (if using).
Pro-Tip: if you have any oil left on the plate after putting the blooming potatoes in the air fryer, keep it and set it aside to add before you increase the temperature in the fryer later on.
Step 4. Once the air fryer is done preheating, add your potato and then cook for 10 minutes.
Step 5. Then once your timer goes off, increase the temperature to 380°F (195°C), drizzle any extra oil directly on the middle of each potato blossom, and just keep cooking for 3-5 more minutes, until browned & crispy, and then serve & enjoy. To make an air fryer potato blossom with cheese, simply sprinkle on the cheese just before you raise the temperature, then return the basket to place.
Recipe notes & tips
Make it Loaded: when making a whole air fried blooming potato, the final potato blossom can hold a surprisingly large and varied amount of baked potato toppings, with the added bonus of being crispy & crunchy underneath.
Adding Flavor: to mix up the flavors, I like to top the potatoes with chopped garlic and dried rosemary or a bit of fresh mozzarella before re-frying them. Try ½ teaspoon dried rosemary + 1 clove of garlic per potato, chopped and minced very thoroughly.
Alternative seasonings include za'atar, fajita seasoning, or steak seasoning (if tolerated). You can also just replace the rosemary with ¼ teaspoon chili powder or paprika if not eating low histamine.
Freezing Blooming Potatoes: these air fryer potato blossoms freeze very well, and are super versatile for pairing. They can also be made with yams or sweet potatoes, but the recipe is meant more for plain potatoes that you plan to top with something delicious.
