✔️ Why This Recipe is Great
Low Histamine Drink: I always get requests from readers for non-alcoholic drinks to enjoy in the summer, and this is one of the next drinks I'm adding to the collection.
Easy to Make & Batch: with just 2 ingredients and no blender needed, this chia apple juice couldn't get much simpler!
🍎 Ingredients

Chia Seeds: These tiny seeds are an inflammation-fighting low histamine seed, packed with both protein and fiber. They're rich in short-chain omega-3 fats that help fight inflammation on a cellular level, and are quite plain-tasting, so they can be customized.
Apple Juice: This low histamine juice is delicious, but is generally high in sugar - you can use any brand you tolerate, but the chia seeds are important to limit the impact of that sugar on your blood sugar levels.
Ginger (optional): though you can skip this, a few slices of fresg ginger can really add zing to this drink, and makes for a pretty garnish!

🍹 How to Make Chia Apple Juice (Step-by-Step)
Step 1) In a medium bowl, combine the chia seeds with ½ cup of apple juice. Stir well to ensure the seeds are evenly distributed (image 1).

Step 2) Let the mixture sit for about 10 minutes, stirring occasionally. This allows the chia seeds to absorb the juice and swell, creating a gel-like consistency (image 2).

Step 3) Once the chia seeds have expanded, pour in the remaining apple juice and mix until well combined.
Step 4) If you’re using ginger to adorn the glass or add flavor, slice it thinly and add it to the juice for a refreshing kick. You can also muddle the ginger slightly to release more flavor.

Step 5) Pour the chia apple juice into glasses and give it a gentle stir before serving. You can also chill it in the refrigerator for a bit if you prefer it cold.
Step 6) Garnish with additional slices of ginger on the side of the glass, if desired.

🫚 Variations
- Citrus Twist: Add a splash of fresh lemon or lime juice, as tolerated, for a zesty flavor boost.
- Berry Blend: Mix in a handful of fresh or frozen berries, like blueberries or blackberries, for added antioxidants and color.
- Mint Infusion: Toss in and muddle a few fresh mint leaves to give the juice a refreshing herbal note.
- Sparkling Apple Juice: Replace still apple juice with unaged sparkling apple cider for a fizzy, refreshing twist.
🧊 Storage and Re-enjoying
This really doesn't make sense to store, so while you could keep it in the fridge for up to 3 days if you're not on a low histamine diet, it is best to make each glass fresh. I don't recommend freezing it, since it makes the chia seeds lose their crunch, though you could turn it into popsicles if you want to avoid wasting it.
👨🏻🍳 Expert Notes & Tips
Sweetness: Feel free to adjust the sweetness by using unsweetened apple juice or adding a bit of honey or maple syrup if you like it even sweeter.
Nutrient-Dense Options: This drink is packed with fiber and omega-3 fatty acids, making it a nutritious choice for breakfast or a refreshing snack.
Storage: If you’re not eating low histamine, chia apple juice can be stored in the fridge for up to 3 days, but it’s best enjoyed fresh. Just give it a good stir before serving, as the chia seeds may settle at the bottom. The rest can also be used to make some great popsicles!
Adding Flavor: Try adding in a dash of homemade flavored simple syrups for some more unusual flavor blends, like my basil syrup, cardamom syrup, or rose syrup.
